Black Fried Rice – Under 300 calories!

Black rice is a great superfood!. It has higher amounts of vitamin E than brown rice, and contains more anthocyanin antioxidants than blueberries. Black rice has a great nutty taste and is said to be good for the kidney, stomach and liver. Here is a delicious way to eat healthy and satisfy your Chinese food cravings with out feeling guilty. Prepared this way, you can enjoy this dish for under 300 calories!

INGREDIENTS
1 tablespoons vegetable oil
cooking spray
4 ounces boneless skinless chicken breast, diced and season with seasoning salt
12-16 pieces medium size shrimp lightly seasoned with salt and pepper
seasoning salt
1/2 cup of combined scallions, yellow onions and green peppers diced.
1/2 cup frozen mixed vegetables (carrots, green peas and corn)
1/4 cup egg whites
2 cups cooked black rice (1 cup dry)
1 tablespoon low-sodium soy sauce
1 teaspoons lemon juice
DIRECTIONS
STEP 1
Spray wok or large skillet with cooking spray; heat over medium heat for 1 minute. Add diced chicken and shrimp; stir-fry 1 minute. Remove meat from wok.
STEP 2
Add 1 tablespoon oil, swirling to coat. Add scallions, onions and peppers mixture stirring, 1 minute. Add mixed vegetables stirring, 1 minute. Turn heat down to low, push mixture to one side, spray open area with cooking spray. Pour in egg whites, stir to scramble.
STEP 3
Add rice and soy sauce; mix together. Remove from heat; mix in chicken, shrimp and lemon juice.
