Rosemary Garlic Lemon Crusted Rack of Lamb Roast Recipe

A Delicious Easter Treat!

Are you looking for a delicious meal to enjoy on Easter? Look no further than this Oven Roasted Rack of Lamb! This simple yet delectable recipe requires only a few ingredients and makes a wonderful meal for the whole family to enjoy!

 

INGREDIENTS

- 2 racks of lamb

- 1 tsp Salt

- 1/2 tsp Ground pepper

- 1 tsp Lemon zest

- 1 tbsp Garlic powder

- 1 tbsp Rosemary (fresh or dry)

- 1 tbsp Ginger powder

- 1 tbsp Onion powder

- 2 tbsp Olive oil

 

DIRECTIONS

1. Preheat the oven to 325°F.

 

2. Start by cutting X marks in fatty parts on the back of two racks of lamb. This is so that the seasonings will seep in  as the fat is rendered.  Rub meat with olive oil.

 

3. Combine garlic powder, rosemary, lemon zest, onion powder, salt, pepper and olive oil together in a bowl. Mix until the ingredients are well combined. I am using a season mix that has all these ingredients in it “Beef Love Rub” and “Rosemary Garlic Lemon Zest” by Funky Good Thyme.

 

4. Rub or brush the spice mixture on both sides of each rack of lamb. With the bones facing up, interlace to combine the two racks.

 

5. Place the racks of lamb on a baking rack in an oven-proof pan and cook until the internal temperature reaches 120°F for rare, 130°F for medium rare, 140°F for medium, 150°F for medium-well or 160°F for well done.

 

6. Remove from the oven and let sit for 5-10 minutes before slicing.

 

8. Serve and enjoy!
